London - Dec. 12, 2011 - I recently ran into Nico Schuermans, Chef and owner of Chambar and Cafe Medina in Vancouver. Both establishments offer exceptional cuisine that eschews formality and puts the focus on tantalizing flavours. In the words of Chef Schuermans, "I'm not here to feed you, I'm here to entertain you." He and his kitchen crew do that very well indeed.
